Make: Peanut Butter Cookie Bars

I'm gonna go ahead & apologize in advance to your waistline, but these cookies bars are to die for.

The original recipe comes from AverieCooks -- she calls them Triple Peanut Butter Monster Cookie Bars, and below is my version.

I've slightly modified the recipe, only because I didn't have all the ingredients in my pantry at the time, and they still turned out magnificent.

You'll need:
1/2 c. melted butter
1 egg
1 c. packed brown sugar
1 T. vanilla extract
1 c. peanut butter
1 c. flour
1 c. Peanut M&Ms
1 c. chocolate chips

1. Preheat oven to 350F & lube up an 8x8 baking plan
2. In a large bowl, combine the melted butter, egg, brown sugar, vanilla & mix until smooth
3. Add the peanut butter & mix until smooth
4. Add the floor & mix until incorporated, but don't over-mix
5. Fold in Peanut M&Ms & chocolate chips
6. Put batter in prepped baking dish & lightly smooth over the top
7. Bake for 25 minutes or until top is set - make sure a toothpick comes out clean.  (I think these are better if they're slightly underdone!)
8. Let bars cool for 30 minutes before cutting into them
9. Try not to eat the whole pan

Let me know if you make these -- I'd love to know what else you throw in yours!

Explore Wisconsin: Bay Beach Wildlife Sanctuary

It was a beautiful Sunday in March.  Zac & I spent the day with our niece & nephew, Elena & Kane, who so badly wanted to "go feed the ducks".  We knew just the spot to take them -- the Bay Beach Wildlife Sanctuary.

The park is a refuge for urban wildlife & is open year round with no admission fee.  There are lots of things to do within the park, but our top priority was to feed the ducks!

After feeding the ducks (and geese), we strolled through the observation / rehabilitation areas...

After that, we took a short walk on the Wildlife Habi-Trek Trail, where the kiddos got to see a mix of animals including wolves, a cougar, a fox, deer, and a coyote.

You can't tell by the look on their faces (it was nearing nap time...) but we all had a great time.  I love that we got to spend the entire day with these kiddos; they bring so much joy to our lives!

Zac & I have plans to return to the Wildlife Sanctuary soon, once the weather starts getting nice (sans kiddos) & hike all the wonderful trails.

Happy 5th Birthday Elena!

Today, this precious little niece/godchild of mine turns 5 years old.

FIVE YEARS OLD!!!  How did that even happen?

One day she was a toddler, then I blinked and she turned 5.

She's a lover, a helper, a chit-chatter & she enjoys the color yellow.  And chocolate.
But who doesn't adore chocolate?

Today, she's getting her ears pierced & when asked where she wanted to go for her Birthday lunch, her answer, "Subway!" (the kid is pretty easy to please)...

Happy Birthday Ms. E.  This Auntie loves you to the moon & back.

Workout Wear: iphone 6 armband

I'm on the hunt for a new armband, since upgrading to the iPhone 6.
I'm looking for a few key elements....
+  Breathable & water-resistant material.
+  Stay put technology (and it must be fully adjustable.).  I couldn't make my previous armband tight
enough when it was on my bare arm.
+  Slim / light weight design.
+  Full access to touchscreen functions.
+  Dark in color.  My last Belkin was lime green, and while it looked pretty at first, it quickly became
Below are some viable options that I've found:

Option 1: Belkin Slim-Fit Plus Armband
Option 2: Tune Belt Sport Armband
Option 3: LED Night Light Running Armband

I'd love to know if you have an armband that you love?  If so, please leave your suggestions in the comments below.  Thanks in advance!

Girl's Day: Paintin' Pottery

A couple weeks ago, we celebrated my mom's Birthday with a Girl's Day.
My sister & I surprised my mom with a trip to Paintin' Pottery or Bead It in De Pere.

We had never been therefore, but a friend recommended it to me.  It was the cutest little place (with great coffee, might I add!), & one that we will frequent again & again.

First, you select a pre-made piece of pottery, which can range from trinkets, to mugs, to platters.  Then you select a stencil, stamp, or if you're good -- you can free-hand paint your piece.  All paint &  supplies are included, & the employees working offer inspiration & suggestions along the way.

Turns out, you need very little artistic talent to make something great.

I found it to be really relaxing & am already dreaming up my next piece...

After you're done, you leave your piece with them & they professionally glaze & fire it.  It's ready for pick-up in 3-7 days.

We ended our day with a trip to Seroogy's for chocolate & met the guys (& kiddos) for dinner at Mackinaws.

It was a wonderful day, & I love that I now have a handmade memory to cherish of our special day!

Happy Sunday.

Make: Pecan Pie

It wasn't until about a year ago that I tasted my first pecan pie, and then I kicked myself for not trying it sooner.  They are SO good.

I quickly set-out to find a recipe; of course I landed on the Pioneer Woman's website, and I knew it was a safe bet to try one of Ree's creations.

You can find the recipe here.

Pssst! I totally cheat & use a store-bought frozen pie crust because really, it tastes just as good.

Pair a slice (or two!) of this pie with coffee and, ohhh -- you'll be in heaven!
